Merwin's Shrimp Gumbo - Slow Cooker

Ingredients
5 Tbsp wheat flour3 Tbsp olive oil4 oz boneless, skinless chicken breasts, cut into small pieces6 oz turkey kielbasa, cut into 1/4 inch rounds 1/2 cup chopped onion 1/2 cup okra2/3 cup bell pepper, finely chopped 1 medium stalk celery, diced1 tsp dried parsley 1 Tbsp minced garlic 1/4 tsp salt 1/2 tsp black pepper 1/4 tsp cayenne pepper 1 Tbsp hot sauce1 tsp dried thyme 2 cups vegetable broth1 (14oz) can diced tomatoes, drained & rinsed1/2 lb shrimp - peeled and deveined
Directions
To Make Roux: In a small saucepan combine flour and oil; mix well. Cook stirring constantly over medium high heat for 5 minutes. Reduce heat to medium; cook stirring constantly approximately 10 minutes or until mixture turns reddish brown.

To Make Gumbo: Place flour oil mixture in slow cooker. Stir in all remaining ingredients, except shrimp. Cover and cook on HIGH for 3 1/2 to 4 hours hours. Add shrimp to the slowcooker and stir. Cover and cook on low for an additional 30 minutes.

Serve over rice.
