Best Pancakes

Ingredients
1 cup flour1 tbsp. granulated sugar1/2 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1/2 tsp. cinnamon1 cup 1% milk1 large egg1/2 tsp. vanilla extract2 tbsps. vegetable oil1 large apple, grated
Directions
In large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. In another bowl or measuring cup, combine milk, egg, oil, vanilla. Add to dry mix, and stir until large lumps disappear. Grate fresh apple (I leave skin on for more fibre). In large pan or griddle sprayed with cooking spray, drop 1/3 cup and cook until bubbles form and edges brown slightly. Turn and cook for another minute or two until golden. Makes 8 pancakes. Serve with pure Maple Syrup.
