S'MO OMELETTE

Ingredients
1 egg white1 cup of fresh spinach, torn1 cup of fresh mushroom, sliced1 cup of onions, raw & sliced1 cup of p/s milk mozzarella cheese (save 1/2 c for last part of recipe)1/4 cup of watersalt and pepper to taste
Directions
First, stir egg white together with 1/4 cup of water and add salt and pepper. Second, add egg white to skillet when almost firm add spinach, mushrooms, onions and 1/2 cup of mozzarella cheese. Fold each side to make an omelette and add the remainder of cheese to top of omelette. Ready to serve, eat and enjoy.
