Easy Ham & Cheese Quiche Cups

Ingredients
1/2 green pepper1/2 red onion2 oz extra lean ham1/4 c. cheddar cheese4 large eggs1/4 c. milk1 small or medium tomatosalt & pepper to taste
Directions
Preheat oven to 350 degrees. Saute ham, onion, and green peppers on medium-low heat (start the green peppers first - add other ingredients after 5 minutes). Cook until onions become clear. Mix ham, onion, green pepper, eggs, and cheese. Pour into small baking dishes. Bake for 20 minutes. Makes 2 servings. Top with tomato.
