Chicken Fruited Salad

Ingredients
3 3/4 c. Chicken - store roasted1/2 c. finely chopped SWEET onions1 c. pineapple - fresh is best if you can get it1/2 c. olive oil mayo3 hard boiled eggs1/4 c. greek yogurt1/4c. german sweet honey mustard1/3 c. chopped pecans1/4 c. organic apricot preserves1/2 tsp salt1 Tbl. curry powder
Directions
This recipe makes 13 - 1/3 c. servings of the chicken salad. I serve it on a bed of lettuce with a side of grapes and a couple of avocado slices, or on a nice nutty bread, I usually try to eat only have a half sandwich and still have the grapes as a side if I go the bread route.
