2.5 pounds moose hamburger (substitute lean ground turkey or chuck steak)1 large onion, chopped1 large carrot, minced1 small zucchini, minced4 cloves garlic, minced1.5 cup mushrooms1 tbsp olive oil1 14.5 oz can no salt added diced tomatoes2 6 oz cans no salt added tomato paste16 oz water4 cups Pomi tomato sauce3 tbsp balsamic vinegar.5 tsp black pepper1 tsp granulated sugar1 tbsp dried oregano2 tsp dried basil2 tsp dried thyme.5 tsp red pepper flakes (optional)
Makes 15 servings with serving size 1 cup.
Place half of olive oil in dutch oven over medium low to medium heat and sweat onion, carrots, mushrooms, and zucchini until onions are translucent. Add minced garlic cloves and cook until fragrant being careful not to burn garlic (bitter ich!). Remove to bowl.
Add remaining oil to pan and bring heat up to medium to medium high. Add meat and brown up. Drain off excess fat. Add back vegetables. In dirty veggie bowl, add tomato paste and water. Mix til smooth. Add all remaining ingredients to dutch oven.
Cook for 3 to 4 hours over low heat.
