Ingredients
1 can Pinto Beans (drained)1 can White Corn (drained)1 can Black-eyed peas (drained)1 small onion diced1 cup celery - chopped1-2 tbsp Jalapeno pepper chopped (seeded and deveined)1 Red pepper chopped1 Green pepper choppedDressing: 1 cup sugar (may reduce to 1/2 cup)3/4 cup Cider Vinegar1/3 cup vegatable oil1/2 tsp pepper 1/2 tsp salt
Directions
combine the ingredients for the dressing and Wisk together (set aside while preparing the rest)

Combine all of the ingredients listed before the dressing. Wisk the dressing again and then pour over the vegetables. Toss well. Chill at least 2 hours before serving.

Serve as is with a slotted spoon as a side dish or with Frito scoops as an appetizer.
