Claire's Shrimp Creole

2 lbs raw shrimp, peeled and deveined1/4 cup olive oil1/4 cup flour1 cup chopped onion1 bell pepper, chopped2-3 stalks celery, chopped1 tsp dried thyme1 bay leaf, whole1-8 oz can tomato saucetap water
Peel and devein shrimp. Add oil to large saute pan. When hot, add shrimp and cook until they turn pink. Remove to a bowl. Add flour to the oil to make a rather liquid consistency and stir constantly until it becomes the color of peanut butter. When it is brown, add the vegetables, bay leaf and thyme. Stir until all are coated. Cook until tender-crisp, about 5-8 minutes. Stir in small can of tomato sauce and enough water to make it a nice stew-like consistency. Stir well to combine. Add in the shrimp and stir to coat it all with sauce. Serve with rice. Serves 6
