Easy Chana Masala

Ingredients
2 tablespoons olive oil1 medium onion, chopped1 tablespoon curry powder1/2 teaspoon tumeric2 tablespoons tomato paste15 oz canned chick peas, drained1/2 tablespoon lemon juice1/2 teaspoon saltblack pepper1 tablespoon margarine
Directions
Makes 2-3 sevings (about 1 cup each)

(1) Heat oil on medium high heat. Saute onions until soft.
(2) Reduce heat to medium, and add tomato paste, curry, and tumeric. Stir about 2 minutes
(3) Add chick peas (with about 3 tablespoons leftover liquid), lemon juice, salt and pepper. Let simmer about 2-3 minutes
(4) Add margarine, and let simmer a couple minutes until chickpeas are hot. Serve over rice or with Roti bread.
