Potato Crusted Chicken (Baked)

Ingredients
4 boneless, skinless chicken half-breasts2 eggs, beatenInstant Potato FlakesSalt & Pepper to taste
Directions
Preheat oven to 350 degrees.

Spray a sheet pan with non-stick cooking spray.

Dip each breast half in the egg, then into the potato flakes to coat. Lay on pan.

Bake 20-25 minutes, turning once, until chicken is cooked through.

Makes 4 servings, one half-breast each.
