Healthy Escarole soup

Ingredients
1 cup cooked Escarole1 tbsp olive oil2 cloves chopped garlic1 small chopped onion2 cups of chopped carrots5 boullion cubes8-10 cups of water1 tbsp parsley1/2 tsp oregano1/2 tsp black pepper
Directions
Saute onions and carrots and garlic in olive oil for 5 minutes. Add water boullion and spices let simmer for 30 minutes. In separate pot steam cleaned escarole until wilted. In last 5 minutes of cooking soup add escarole. Simmer 5 minutes.
