Chicken and Vegetable Orzo

Ingredients
28 oz raw chicken breast, cubed1 tbsp olive oil4 tbsp garlic36 oz 99% fat free chicken broth1 tbsp italian seasoning4 zucchini, chopped3 tomaotoes, chopped2 bell peppers, chopped2 cups orzo pasta12 oz steam in bag sweet peas16 oz mushrooms, sliced1 medium onion, chopped1 tbsp red pepper flakes
Directions
Steam peas and set aside. Heat 1 tbsp oil in pan, add garlic, zucchini, bell peppers, mushrooms, and onion. Saute until soft. In another pan, heat 1 tbsp of oil, add chicken, red pepper, and salt and pepper to taste. Saute until chicken is cooked thoroughly. Add chicken broth and italian seasoning. Bring to a boil. Add orzo pasta and simmer for 8 minutes. Add tomatoes and peas to vegetable mixture. Add chicken and orzo mixture to vegetable mixture. Simmer until excess liquid cooks off. Makes 14 1-cup servings.
