Chicken Lo-mein

Ingredients
1 chicken breast cubed5tsp sugar3T rice wine vinegar1/2 c low sodium soy sauce1 1/4 C chicken broth1c water1T sesame oil1/2 tsp pepper2T cornstarch1 (12 oz) package spaghetti noodles cooked2 T vegetable oil2T minced ginger2T minced garlic1 package frozen stir fry vegetables1 onion scliced2 stalks celery sliced
Directions
mix 2 tsp sugar, 2 T vinegar and 1/4 c soy sauce. add chicken and marinate 1 hour- overnight.

combine broth water sugar vinegar soy sauce sesame oil and pepper in a small bowl, stir in cornstarch to dissolve, set aside.

heat oil in wok or large frying pan. drain chicken and stir fry 2-3 min. add onion and celery. stir 1-2 min. Add frozen vegetables, garlic and ginger. Stir 1-2 min. Add pasta and cornstarch mixture. stir until sauce thickens. serves 6
