Fried Rice with Edamame, Scallions, & Chicken

4 cloves of garlic4 scallions, sliced4 cups brown rice, cooked1 red bell pepper, chopped1 1/2 cups edamame1/2 cup yellow corn1 lb. chicken breast, boneless, skinless, chopped2 eggs, slightly beaten4 tbsp. soy sauce, low sodium
Spray skillet with cooking spray. Add chicken and cook through. Add garlic and scallions. Cook for 3 minutes.
Add rice, pepper, edamame, and corn. Heat through.
Make a well in the center of the skillet and spray with cooking spray. Add beaten eggs. After eggs are cooked combine with rice mixture and add soy sauce.
One serving is 1 1/2 cups. Makes 4 servings.
