Banana Bread/Muffin

1 cup mashed bananas (3 bananas)1/2 cup unsweetened apple sauce1 1/2 cup splenda4 tbsp buttermilk or sour milk (3 tbsp milk & 1 tbsp vinegar - mix before adding)1 tsp vanilla6 egg whites1 tsp baking soda1 1/2 cup whole wheat flour1/2 tsp salt1 1/2 tsp cinnamon1/2 cup nuts (walnuts)
Combine bananas, applesauce, splenda, milk, vanilla & eggs then mix. Combine flour, soda, salt cinnamon & nuts separately. Add to liquid.
Option 1: place 1/4 cup of mixture into muffin tin with either muffin liners or sprayed with cooking spray. Cook for 20 minutes at 350 on middle rack or until toothpick comes clean. Makes 16-18 muffins.
Option 2 Spray 2 bread tins and put half the mixture into each. Baked at 350 for 40-45 minutes or until toothpick comes clean. Makes 8-9 slices per loaf.
