Butternut Squash Soup

Ingredients
* Butternut Squash, 4 cup, cubes (remove) * Apples, fresh, 1 medium (2-3/4" dia) * Carrots, raw, 2 large (7-1/4" to 8-1/2" long) (remove) * Onions, raw, 1 medium (2-1/2" dia) (remove) * Olive Oil, 2 tbsp (remove) * Cinnamon, ground, 2 tsp (remove) * Nutmeg, ground, .25 tsp (remove) * Chicken Broth, 3 cup (8 fl oz) (remove)
Directions
Heat oil in a large kettle. Add chopped onion and let saute until translucent. Add cinnamon and nutmeg. Stir in peeled and chopped carrots, squash, and apple. Saute over medium heat for about 5 minutes. Add chicken broth and simmer until vegetables are tender. Blend with immersion blender and serve. Delicious!
