Santa Fe Rice Salad

Ingredients
3 cups brown rice1 can red kidney beans, rinsed and drained1 large tomato, seeded and diced1/2 cup diced or shredded sharp cheddar cheese1/2 cup sliced green onion1 avocado, diced1/3 cup NAKANO rice vinegar (original or red pepper)1/2 tsp. salt and ground cumin1 T minced jalopenos1/8 tsp. garlic powder
Directions
In a large bowl, combine rice, beans, tomato, cheese, onion, and avocado. In small bowl, combine rice vinegar, oil, salt, cumin, jalopeno and garlic. Mix well. Drizzle over salad and toss to coat.

Makes 6 generous 1 cup servings.
