Spicy Shrimp Tacos

Ingredients
4 La Tortilla Factory Lo Carb Tortillas16 Large cooked shrimp (tails removed) 1 Cup Romaine Lettuce1/2 cup Cabot Vermont 50% Light Cheddar Cheese1/2 cup onions sauteed (use Pam non fat cooking spray)4 Tsp Siracha Chili Sauce (or Hot Sauce)4 Tbsp Newman's Own Mango Salsa1 Tbsp fresh chopped cilantroLime
Directions
If you're usnig frozen shrimp, you will need to thaw and remove tails. Once complete, skewer and marinate shrimp in siracha sauce for about 5 minutes--while you chop your onion. Throw on the grill- for a couple of minutes to warm (they are already cooked after all).
Sautee onions with Pam non cook cooking spray until soft.

Time for assembly.

Lay out all 4 tortillas. Top each with 1/2 tbsp of sour cream, add 1/4 cup lettuce, 1/8 cup cheese, 4 grilled shrimp and 1/2 cup onion. Top with salsa, sprinkle of cilantro and squeeze of lime juice.

Makes 2 tacos per person.
