Chicken and Broccoli Stuffed Potatoes - Light

Ingredients
1 small potato2 T chopped onion1/4 c chopped broccoli (I prefer florets)1 sm clove garlic, chopped1/2 chicken breast skin, bone and all visible fat removed3 T fat free sour creamsalt and pepper to taste
Directions
bake potato until done. saute onion, broccoli and garlic until tender. add chopped chicken and saute until warm. Cut potato in 1/2 and scoop out all the insides. mash potato insides with sour cream and salt/pepper. add the chicken and broccoli mixture and mix gently. Put mixture back into the potato skins. Bake at 400º for 10-15 min.
