Zucchini Bread

Ingredients
1 cup whole wheat flour1/2 cup all purpose flour1/2 teaspoon salt1/2 teaspoon baking soda1/2 teaspoon baking powder1 1/2 teaspoons ground cinnamon1 1/2 eggs1/4 cup vegetable oil1/2 cups white sugar1/2 cup Brown Sugar1 1/2 teaspoons vanilla extract1 cups grated zucchini
Directions
Preheat oven to 325
Grease loaf pan with some cooking spray and if you like some flour.
Mix oil, eggs, applesauce, and sugar in bowl. In seperate bowl mix flour, baking soda, baking powder, cinnamon and salt. Add flour mixture with wet mixture. Add Zucchini.
Cook for 50-60 mins or until a knife comes out clear when poked.

    The bread came out alright, but then again I wasn't sure how much applesauce to use (it wasn't listed) and if there was a specific time to put in the vanilla. I tried what I thought may work and went from there. Still a decent bread thank you. - 7/14/10

    I also did not know how much applesauce to add, and since it was not listed in the ingredients, I did not know I needed it until I was half way through putting this recipe together. I had no applesauce on hand, so I subbed two ripe bananas. The batter is delicious, so hoping the bread turns out ok. - 8/1/19
