I am sorry to be negative, but I live in Louisiana and this is a soup recipe not an etoufee'. - 1/6/09

Ok this is not really Etouffee, but it was sure the best faux version I've ever had and super healthy! No measuring. I added different colors of peppers that I had, 5 garlic, chopped dried parsley and oregano. I rinsed the beans (remove salt) instead added a little water & corn starch to thicken. - 2/13/09

This is in the top 3 of my all-time favorite recipes from here! It is DELICIOUS! Authentic Etoufee' from Lousiana is WAY fattening - roux is the base, which is full fat cream and butter. This healthy version satisfies my cajun-cravin' without all the fattening calories.
    THANKS FOR SHARING - 1/7/09

Very good. Because there was no guidance on how much Cajun spice to use I guesstimated at using 1 tsp. I would probably do an additional 1/2 tsp. to 1 tsp. for my taste next time. I also used chicken apple sausage instead of smoked sausage which added a nice sweet flavor. - 7/19/08

This was very good, though not really an etouffee. My husband who loves spicy food enjoyed it with me. I would love to make it again, substituting chicken breasts for the shrimp. - 7/11/11

This recipe is a really good soup...but Matt Cajun husband and children laughed when I told them it was supposed to be Etoufee...It doesn't compare at all to Etoufee. - 9/14/10

The whole family enjoyed it. Added the shrimp with only five minutes to go to keep from overcooking. Used dijon mustard instead of cajun seasoning. - 2/23/10
