Shrimp and Sausage Etoufee

Ingredients

1 can black beans, strained and juice reserved1 can diced tomatoes1 large green pepper, diced1 medium onion, diced2 tbsp extra virgin olive oil1 pkg. low-fat smoked sausage, sliced thin2 cups shrimp, thawed, uncooked4 cloves of garliccajun seasoning to taste
Saute' onion, garlic, and peppers in olive oil until tender. Add shrimp, sausage, tomatoes (including juice), and black beans (without juice).
Slowly add in cajun seasoning until you get the desired taste.
Simmer for about 20 min on medium heat.
If your sauce isn't thick enough, you can add in some of the black bean juice to help thicken it.
Serve over brown rice and enjoy.

Ok this is not really Etouffee, but it was sure the best faux version I've ever had and super healthy! No measuring. I added different colors of peppers that I had, 5 garlic, chopped dried parsley and oregano. I rinsed the beans (remove salt) instead added a little water & corn starch to thicken. - 2/13/09

This is in the top 3 of my all-time favorite recipes from here! It is DELICIOUS! Authentic Etoufee' from Lousiana is WAY fattening - roux is the base, which is full fat cream and butter. This healthy version satisfies my cajun-cravin' without all the fattening calories.
