5 a day bulgur

Ingredients
1 med chopped onion1 cup chopped broccoli1 cup shredded carrot1 small bell pepper1/3 cup chopped fresh parsley1 tsp canola oil1.5 cups dry bulgur2 cups chicken broth, low sodium8 ounces canned, drained chickpeas1 lime
Directions
wash and chop fresh onion, broccoli, carrots, pepper, and parsley.
Heat cabola oil in a large skillet. Add onions and cook until soft.
Add bulgur and stir to coat. Add 2 cups chicken broth to the skillet, bring to a boil.
Lower the heat, add remaining vegetables and chickpeas. Cook for 10 minutes or until the liquid is absorbed.
Add parsley and stir. Squeeze lime on if wanted. Serve warm or cold.
