Lo Carb Chicken Parm

Ingredients
2 Tbsp Olive Oil4 Tbsp Tomato Paste1 Tsp Oregano1 tsp Salt (or to taste)1 tsp Black Pepper (or to taste)1 tsp Crushed Red Pepper (or to taste)1/4 cup water1 or 2 Chicken Breasts1/3 cup shredded cheese1/4 cup Parmesan Cheese (grated)
Directions
In small sauce pan, combine olive oil, tomato paste, oregano, salt, black pepper, crushed red pepper. Heat over medium heat. Add water until it is a nice sauce consistency. Remove from heat.
Take 1 (or 2) Chicken breasts. in a small baking dish. Rub them with a little olive oil and pound them until they become more flat.
Pour the sauce over the chicken breasts. Sprinkle shredded cheese over chicken and sauce. Top with parmesan cheese.
Bake at 350 for about 20 minutes or until chicken is done.
Serve with a vegetable of your choice.

This is delicious dish for when you are craving Italian food, but are on a lo carb diet.
