Yeast, bakers, .5 ounce (remove)Water, tap, 2 cup (8 fl oz) (remove)Brown Sugar, .25 cup, packed (remove)Vital wheat gluten, 25 grams (remove)*Whole Wheat Flour, 2 cup (remove)**Flax Seed Meal (ground flax), 4 tbsp (remove)Soy Flour, .25 cup, stirred (remove)Wheat bran, crude, 1 cup (remove)Salt, 1 tsp (remove)*Canola Oil, .13 cup (remove)*Bob's Red Mill Whole Wheat Pastry Flour, 2 cup (remove)
Soften yeast in 110 degree water. Add brown sugar, let rest till frothy. Add vital gluten, whole wheat flour, flax and soy flour and wheat bran, beat 200 strokes or use mixer. Let yeast work 10 minutes (rest), then add sea salt, oil and one cup whole wheat flour. Knead 6-8 minutes on surface floured with up to two cups whole wheat pastry flour. Proof one hour in warm, non drafty location. Divide into 2 loaves, proof again 30 minutes. Bake at 400 degrees for 30 minutes.
