Lowfat Belgian Waffles

Ingredients
Directions
2c. flour3/4 c sugar (1/2c for less sweet)3 1/2 tsp baking powder2 eggs separated1 1/2c milk1/2c butter, melted1/2c applesauce1tsp vanilla
Combine all dry ingredients. Lightly beat egg yolks and combine all wet ingredients except egg whites. Add wet to dry mixture. Beat egg whites until stiff in separate bowl. Fold into batter. Bake in waffle iron.
Servings vary depending on size of waffle iron. Mine makes 18-20.

These were great. I used whole grain flour, which made them more filling. I also used only 1/2 cup sugar. My kids loved them and wanted more. - 1/3/09
