6 large potatoes, cut into large chunks with skin left on1 large onion, chopped1 large green or red bell pepper, chopped2 tbsp. chopped parley1/4 C water.
Preheat oven to 450o. Saute onions and diced pepper in 1/4 cup water. Combine all ingredients. Place in shallow baking pan. Bake, stiring occationally, for 40 minutes or until potatoes are tender. makes 6-8 servings.
