Introduction

This is one of my favorite veggie dishes and its so easy to make. You can leave out the potatoes if you don't want the extra carbs. Can be used as a main dish or side item. Ingredients

    1 tbp EVOO
    Approx 50 fresh green beans, cleaned
    1 medium onion, chopped
    3 cloves garlic, chopped
    8 oz mini cubed ham (you can use bacon or sausage too)
    2 white potatoes, peeled and diced
    1 tsp salt
    1 tsp black pepper
    2 cups water

Directions

Heat up EVOO in a pot and add garlic, onion, and ham. Let sautee until onion is translucent.

Add potatoes, green beans, salt, and pepper.

Pour in 2 cups of water. Stir, turn heat to low. Cover pot and let cook about 45 minutes stirring every so often.

    I make a repice like this a lot. the recipe that i use has everything but the EVOO and i love it. Most of the time i make it as a meal and it is very filling and taste great! - 12/25/10

    I make a recipe just like this that my mother taught me except she used green beans that she picked in her garden and canned. I use canned green beans from store. - 10/20/17

    Very Good
    I completely missed the part where you are supposed to simmer it with water for 45 minutes. I had already omitted the potatoes.. and the dish still came out wonderful. Crunchy sauteed green beans with onions.. delicious! - 1/7/12
