Ingredients

1 clove garlic, minced
2-3 skinless boneless chicken breasts (about 1 lb.)
1 can (14.6 oz.) black beans, drained
1 can (14.6 oz.) corn, drained
1 cup salsa
Directions
1. In a medium saucepan, combine beans, corn and salsa. Heat over medium high until mixture starts to bubble, then turn to low to simmer.
1. Meanwhile, spray a non-stick skillet with fat free cooking spray and heat to medium-high.
2. Add garlic and sautée until lightly browned, about 30 seconds.
3. Add chicken to skillet, turning occasionally, until chicken is browned and cooked through, about 15 minutes. Salt and pepper to taste.
4. Pour bean mixture into the chicken skillet and let simmer for about 10 minutes.
5. Makes about 6 servings. Tastes great served with rice or vegetables.
