Lemon Rice with Cod

Ingredients
Directions
1 cup brown rice, medium grain 1/4 cup lemon juice2 cups red ripe tomatoes, chopped or sliced 1 cod fillet Dash of salt
Cook the rice according to package directions.
Add lemon juice and allow the rice to simmer in the juice for 10-15 minutes.
In a separate pan, add a dash of lemon juice and bite size pieces of cod, sprinkled with a dash of salt. Allow the cod to cook through.
Add the cod and diced tomatoes to the lemon rice and allow to simmer for 10 minutes.
Serve while hot.

This wasn't a bad recipe, but the all one texture thing didn't work for me. I like some of the ideas others have put out there for adding texture. I also think if I do make this again, I'd add pepper and maybe some garlic to give it more kick. Of the 6 eating it, 2 -no's, 2 yes, 2 - it was ok - 7/18/08

following the cooking instructions over cooked my fish also I added a cup of broccoli on top for color I started the rice and after the stir I placed my seasoned fish fillet in a steamer basket on top of the rice cooked 10 minutes added the broccoli finished steaming and it was good to go
