Chicken, Shrimp & Tofu Szechuanese

Ingredients
Olive Oil1 chicken breast - strips1 shrimp ring1/2 brick Tofu - stripssea salt & ground pepper1 cup red pepper into strips1 cup firm zucchini into strips1 purple onion into strips1/2 cup snow peas1 cloves garlic1 tsp ground gingerSauce:sea salt & ground pepper2 tsp flour3 tbsp soy sauce3 tbsp rice or white wine vinegar1 tsp honey1 cup vegetable broth or water
Directions
Place some of the oil in a nonstick skillet or wok. Brown chicken, tofu & shrimp over medium heat. Season with sea salt and pepper. Remove from heat and set aside.

In same skillet with more oil, stir-fry vegetables garlic and ginger until just done, but still bright in color. Add Sauce mixture (see below) o skillet. Bring to boil and stir constantly. Add chicken, tofu and shrimp. Heat through. Serve over brown rice.

Sauce Prep: Mix all dry ingredients in a small bowl.

Mix liquid ingredients in a separate bowl. Slowly add liquid to dry mixture, to avoid lumps, until fully mixed.

Makes 4 serving of 1 cup each.
