Gluten Free Chicken Alfredo Sauce

1/2 lb chicken breast1 T olive oil32 oz Half and Half - fat free4T Bob's Red Mill Gluten Free All Purpose Baking Flour 2 cloves garlic, diced1/4 C unsalted butter
Saute the chicken breast in the olive oil until cooked through - you can cut the chicken into strips to cook faster. Cover to keep from drying and set aside.
In a medium sauce pan, melt the butter and add the GF flour, mix well. Add the half and half, garlic and salt and pepper to taste. Stir frequently over medium-low heat with whisk. Sauce will thicken within about 20 minutes. Once thickened, add the cooked chicken.
Serve over your favorite gluten free pasta.
