Chunky Hummus (Opa style)

Ingredients
1-14oz can chickpeas (garbanzo beans)juice of 1/2 lemon1 1/2 - 2 garlic cloves, minced1/4-1/2 tsp salt1/2 tsp black pepper1 tbsp extra virgin olive oil
Directions
1. Gently rinse chickpeas and let drain.
2. Mix lemon juice, minced garlic, salt, pepper, and oil in bowl.
3. Add chickpeas and mash with potato masher until desired chunkiness. It is important to incorporate the oil mix with the chickpeas, this can make or break the recipe. Be sure to mash the chickpeas with the other ingredients and not by themselves.

Makes (4) 1/2 cup servings. Total cook time 15 min.
