Southwest Chicken Soup

Ingredients
1 chicken breast, skinless/boneless1 (14 ounce) can chicken broth1 can Rotel tomatoes, or diced canned tomatoes, undrained1 (4 ounce) can diced green chiles1 teaspoon taco seasoninggenerous pinch of red pepper flake, optional1 tablespoon dried minced onion1 (19.75 ounce) can black beans, drained and rinsed1 (11 ounce) can Mexicorn or regular corn1/4 cup light sour cream
Directions
Cut chicken into bite sized pieces. To a saucepot add chicken broth, tomatoes, green chiles, taco seasoning, red pepper flake and onion. Heat to boil, add chicken. Stir and boil for 2-3 minutes. Add black beans and corn, reduce heat and simmer 10-15 minutes. Remove from heat and stir in sour cream. Alternately you can leave out the sour cream or add a dollop to each serving.
