Ingredients
2 Tbls of Olive Oil1 Red Bell Pepper1 Yellow or orange Bell Pepper1 Cup Sliced Onion 2 Cups Sliced Fresh Mushrooms3 Chicken breastsCorn TortillasSour Cream
Directions
Cook chicken thouroughly (bake it or grill). Cut chicken breasts into long strips. In a large skillet, add Olive Oil, Bell Peppers, Onions, and Mushrooms. Cook on Medium heat, covered, until vegtables are soft and mushrooms are browned slightly. Then combine the chicken strips from before with the vegitables and cook on low for aprox 10 covered to allow chicken to absorb flavor. Spoon desired amount on tortilla and garnish with sour cream. Makes about 4 servings. ENJOY!
