Texas BBQ

Ingredients

1 beef brisket (2 lbs) cut into halves if necessary to fit into slow cooker. (I also use a top round or any other roast that is inexpensive)3 tbsp Worcestershire sauce1 tbsp chili powder1 tsp celery salt.1 tsp pepper1 tsp liquid smoke2 cloves garlic2 bay leavesBBQ Sauce2 tbsp veg. oil1 med chopped onion2 cloves garlic minced1 cup ketchup½ cup molasses (can use brown sugar and corn syrup)¼ cup cider vinegar2 tsp chili powder½ tsp dry mustard
Trim excess fat. Place meat in resealable plastic food storage bag. Combine Worcestershire sauce, chili powder, celery salt, pepper, liquid smoke, garlic and bay leaves in bag and mix up. Refrigerate 24 hours. (I don't do this for 24 hours, generally I fix it up the night before to go in the crock pot in the morning)
Place meat and marinade in slow cooker and cook on low 7 hours, meanwhile prepare barbecue sauce(directions below)
Remove meat from slow cooker and pour juices into 2 cup measure. Let stand 5 minutes, skim fat from juices. emove and discard bay leaf. Stir 1 cup of defatted juices into barbecue sauce. Discard remaining juices.
Return meat and barbecue sauce to slow cooker. Cover and cook 1 hour or until meat is fork tender.
Barbecue Sauce
Heat oil, add onion and garlic; cook until onion is tender. Add remaining ingredients and simmer 5 minutes.
