Anthon's Paella

Ingredients
150g Roast chicken thighs cubed50 g uncooked cod fish cubed (defrosted if frozen)525g Tesco Seafood Selection (defrosted if frozen)60g onion chopped500g Uncle Bens Chicken rice15 ml Sunflower oil
Directions
Follow the instructions on the Uncle Bens rice (we use the microwave method). Fry the onion in the oil until transparent, add the cooked chicken, simmer for 2 minutes. Mix the cooked rice in with the chicken and onion and simmer for 1 minute. Finally add the fish and seafood mixing it in well, this allows all the different flavours to merge. You may need to add a drop of water at this point if the food is looking stodgy. Put the lid on and simmer for 20 minutes. Serve immediatly. Serves 4.

    Looks very interesting and good. Seems as though this is more than one serving. That's a lot of food and calorie count. May need to be re-evaluated. - 1/26/19

    This looks good though I suspect the portion size was not input correctly which likely affected the calorie count which I presume is closer to 350/serving. I like this recipe b/c it is so easily adaptable (i.e., lo/no-cal additions of spices -- turmeric or saffron(!)). I love seafood paella - 1/17/13
