Lentil soup

Ingredients
500g red lentils - or others that you can find1 big onion, chopped2cloves of garlic, choppedvegetable stock (1 tsp of Vecon diluted in 275 ml of boiling water)
Directions
Cook until lentils are soft - if using red ones they will break apart, no worries, it's what needs to happen!

Left-overs can be reheated. Ideal to take as a packed lunch :)

This recipe serves 4 as lunch / dinner main course.
