Stuffed Portabella Mushrooms

2 large portabella mushrooms1/2 cup spinach (frozen or fresh)2 T Hellman's light mayonnaise1/2 cup shredded 2% mozzarella cheese3 T French's fried onions1 tsp minced garlic1/4 tsp crushed red pepper flakes
Remove stems and gills from mushroom caps. Set caps aside. Chop stems and gills and place in small bowl. Add spinach, mayonnaise, cheese, onions, and garlic. Mix well.
Place mushroom caps in lightly greased baking dish, stem side up. Lightly sprinkle with salt and pepper if desired. Fill each mushroom with half of the cheese mixture. Sprinkle crushed red pepper on top. Bake at 375 degrees for 15 minutes, or until mushrooms are cooked and filling is slightly browned and hot throughout.
