Tofu Italiano

Ingredients
1 block of extra firm tofu2 large eggs1 tsp dried oregano1 tsp dried basilgarlic powder to taste1/3 cup bread crumbs4 ounces mozzarella cheese2 ounces parmesan cheese15 oz can of tomato sauce
Directions
Press tofu in towel layers to get excess liquid out. Slice into four equal patties (roughly 1/4").

In a small bowl, mix eggs and spices. In a second bowl, add the bread crumbs.

Dredge the tofu through the egg, then the bread crumbs. Quickly fry each piece until browned using non-stick cooking spray (you can use olive oil, but the recipe nutritional information doesn't have it).

After each piece is fried, place in a flat baking dish. Top each slice with 1 ounce of the mozzarella each.

Top with tomato sauce. Sprinkle parmesan over everything. Bake in the oven for around 15 minutes.
