Ingredients
1 tsp EVOO1 pkg Pillsbury thin crust pizza dough2 cubs shredded chicken breast8 oz grated 75% reduced fat cheddar cheese2 small tomatoes, seeded and diced small1/4 medium red onion diced small1 medium avocado diced small1 tbsp lemon juice
Directions
Preheat oven to 450 degrees. Brush large cookie pan with oil and place dough in pan. Sprinkle boiled/shredded chicken on dough along with cheese. Bake 15 minutes. In a small bowl, combine avocado, tomato, onion and lemon juice. When pizza is out of oven, sprinkle this mixture on the cheese/chicken and bake another 5 minutes. Enjoy!

    It was good, but it needs some seasoning. I didn't like the lemon juice, next time I will try lime juice and I may add cilantro to the tomato/avacado mixture. I did like the reduced fat cheese and chicken on pizza, and I may play around with other veggies on top. - 4/18/11
