Namaste Bread Mix GF Gluten Free

1 packet active dry yeast (2-1/4t)1 pkg Namaste GF bread mix (16oz=453g dry mix)1 whole egg3 egg whites1/4c oil (I used olive oil because I have a lot on hand)1 c warm water (110*)
Per pkg instructions:
Prep: Lightly grease or spray a non-stick bread pan (I used glass).
Mix: Combine warm water and yeast packet in small bowl and stir. Let stand for about 5 mins. (water to be about 110* - my candy thermometer broke, so I used my meat thermometer. I used a glass measuring cup and microwaved the water for about 30 seconds. 1 min was too long - your micro might be different.)
Combine egg, egg whites and oil and add to yeast mixture. Add wet ingredients to dry mix and beat w/elec mixer for 3 mins on medium speed. Scrape sides and bowl down as you go. Pour batter into pan, leveling off as needed.
Cover loosely and let rise for at least 30 mins in a warm place. Preheat oven to 350* while bread is rising.
Bake for 65-70mins (don't underbake). Loosely cover w/foil after 30mins to prevent over-browning. Test the bread by tapping the bottom of the bread with your fingertip. If it sounds hollow, it's done. Let cool in pan for 5 mins then turn onto cooling rack and let cool completely before slicing. Use within 48 hrs or freeze.
