1/2 cup butter, softened1/2 cup shortening1 1/2 cup white sugar1/2 cup egg beaters2 teaspoons vanilla extract2 3/4cups all-purpose flour2 teaspoons cream of tartar1 teaspoon baking soda1/4 teaspoon salt (optional)2 tablespoons white sugar2 teaspoons ground cinnamon (more if desired)
1. Preheat oven to 400º F (200º C)
2. Cream together butter, shortening, 1 1/2 cups sugars, egg beaters and vanilla extract. Blend in flour, cream of tartar, baking soda and salt. Shape dough by rounded spoonfuls into balls* I use a very tiny ice cream scoop with button for releasing the ice cream/cookie dough*.
3. Mix 2 tablespoons sugar and 2 tablespoons cinnamon in a flat pan or plate. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets to cooling rakes.
Makes about 48 cookies....unless you eat half the dough :)
