Mini Meatloafs

Ingredients
Directions
400g ground beef (lean)1/2 cup rolled oats1 cup chopped onion1/2 cup celery1 cup chopped red or green pepper3/4 cup defrosted frozen spinach3 garlic cloves200g or half a can of tomatoes2 eggs6 T BBQ Sauce
Saute all ingredients except garlic, tomatoes and eggs.
Once browned, add garlic and set aside to cool. Once cool, add tomatoes and eggs. Mix together and spoon into pre-sprayed Texan size muffin pans. (This mixture should make 6 med Texan size muffins which is quite large). Evenly top each mound with BBQ sauce.
Cook at 180C for around 45 minutes or until cooked.
--The reason for my serving size is that I allow them to cool then cut them into 3 slices each. I like this portion size as I can have one slice if I am not too hungry and make "giant" meatloaf sandwiches at only 180 calories (for the meat filling) with two slices:)
