Apple Walnut Muffins

Ingredients
Dry Ingredients:1 c. white flour0.75 c. white whole wheat flour0.5 oat bran0.5 c. wheat bran0.3 c. light brown sugar, packed1 tsp baking powder2.5 tsp baking soda1 tsp cinnamon, ground1 tsp cloves, ground1 tsp nutmeg, ground0.5 tsp saltWet Ingredients:2 tbsp vanilla extract2 eggs1 c. 1% milk0.75 c. apple butter2 tbsp molassesAdd-Ins:2.5 medium Granny Smith apples, chopped1 c. Walnuts, chopped and toasted
Directions
Preheat oven to 375 degrees.

Combine all dry ingredients.

In a separate bowl, whisk eggs until combined, then add remaining wet ingredients and thoroughly combine.

Stir wet ingredients into dry ingredients until combined.

Add add-ins (apples and walnuts) until combined.

Pour mixture into greased muffin tins and bake until skewer inserted in center of muffin comes out clean, 17 - 20 minutes. Makes 24 standard-sized or 12 "jumbo" (one-cup tin) muffins.
