Stuffed Eggplant roll ups

Ingredients
1 whole eggplant, sliced 1/4 inch thin1 cup low fat ricotta cheese1 and 1/4 cup park skim shredded mozzarella1 egg3/4 cup - 1 cup marinara sacueitalian seasonings
Directions
Pour about 1/2 cup marinara sauce in 8x8 baking dish. Place rolled eggplant bundles seem side down on top of sauce. Add rest of sauce and sprinkle rest of cheese. Bake covered for 30 minutes, uncover and bake additional 10-12 minutes. Makes about 11-15 roll ups. Serving size is 3-4 roll ups.
