Spicy Sesame Peanut Noodles

Soba NoodlesRice Wine VinegarSesame OilPeanut ButterSoy SauceHot Chili OilSugarCrushed Red PepperGinger RootGarlic PowderGreen OnionsPeanuts
Cook soba noodles according to package directions. Drain and rinse for a few seconds with cool water to stop the cooking process.
While the noodles are cooking, dice a 1" piece of ginger root and saute for 2 minutes in a teaspoon of sesame oil. Transfer to a large bowl. Whisk in all of the rest of the ingredients except the noodles, green onions, and peanuts.
Add the noodles to the sauce and toss to coat. Garnish with green onions and chopped peanuts.
Serve at room temperature or slightly chilled.
