White Wine Chicken with Carrots and Peas

1 boneless, skinless chicken breast, cut in half2 glasses (about 7 ounces) of white wine (I used Moscato, a sweet wine)1 pat of butter, melted30 baby carrots1/2 cup frozen peasGarlic salt to taste
Place chicken breast in a small, deep baking dish. Place vegetables on top of and around chicken. Mix together melted butter and wine and pour over chicken and vegetables. The liquid should cover most of the chicken & veggies, but some will still be poking out. Sprinkle garlic salt on top. Bake at 350 for about 60 minutes. I like my carrots pretty soft, so I might've cooked it for longer than other people would like. Every 20 minutes or so, give the vegetables a stir so the ones on top don't get too dry. I served this with a little brown rice. It was very filling and really yummy!! =)
