Slow cooker Guinataan Chicken Adobo with with Rice

6 Chicken thighs, fat and bone removed3/4 cup vinager3/4 cup watertsp sugar2 tbs soy sauce2 bay leavestsp pepper1 onion, choppedsalt to taste14 ounce can of LIGHT Coconut Milk3 cups of brown rice
Chop onions.
Put everything into the slow cooker, set on high for 5 hours.
When ready, chop up chicken, if desired.
When chicken is finished cooking, scoop out 3 cups of broth + 3 cups of water and put it in a rinsed pot with 3 cups of rice. Cook until done.
Serve 1/3 cup of adobo over 1/2 cup of finished rice.
Makes 12 servings.

Such negativity! I got this recipe off of Allrecipes.com as I've never made adobo before.
We eat more veggies/less meat in our daily diet, so this recipe was perfect. Chopped/shred the meat & it's quite enough and didn't seem like anything was missing.
You could always add more, if you like.
