Easy Almond Chicken

2 boneless chicken breasts3 TB peanut oil1 cup sliced celery1small clove garlic, minced1-14.5 oz can chicken broth2 TB GF soy sauce1 TB candied ginger, finely chopped1-8 oz package frozen chinese pea pods1 cup sliced fresh mushrooms2 TB cornstarch3-4 TB watersalt to taste1/4 cup toasted slivered almonds
Slice the chicken into long, thin strips. Using a wok or heavy frying pan, heat the oil, then add the chicken and saute for 5 min. Stir in celery and garlic and continue cooking for another 3 min.
Add the chicken broth, soy sauce, and ginger. Heat to boiling before adding the pea pods and mushrooms. Cover and simmer for 5 min (do not overcook).
Mix the cornstarch and the water. Stir into the chicken mixture and cook until the liquid thickens, 1-2 min. Taste and add salt if necessary (this will depend on the saltiness of the broth).
Pour the stir-fry onto a round serving platter immediately and top with the almonds. Serve rice separately.
