Cheese & Vegetable Pie

1-1/2 to 2-cups of Skim Ricotta Cheese1/2 cup of Egg substitute (or 2 eggs)1/2 cup of part skim Mozzarella cheese1 or 2 ouces of shredded asiago or good strong cheesea bunch of asparagus (or other vegetables) trimmed, cut and steamedA liberal amount of garlic pepper grinder (fresh ground black pepper and garlic powder) (approx 1 tsp)1/4 to 1/3 cup of whole wheat, seasoned bread crumbs (or regular ones)You can add ham/pepperoni/prosciutto (but adds fat and calories, so remember to recalculate recipe)
Preheat oven to 350
take a glass baking dish (corning or such), spray with cooking spray
Mix the eggs, cheeses and seasoning in a bowl, place some of the asparagus about 1/3 of it (or whatever you are using) in the bottom of the baking dish and then pour the cheese mixture on top of it, using remaining vegetables on top, taking a fork and pushing them down into the cheese mixture until you can see them, but most is in cheese mixture. Lastly sprinkle the bread crumbs on top of the whole thing, if you like you can keep the grated cheese aside and sprinkle that on top as well, then put in the oven and bake for about 35-40 minutes, take out let cool about 15 minutes. Makes about 6 servings.
